Butternut Squash recipes

Indian butternut squash soup:

This soup is very healthy and you can even use the butternut squash as an ingredient in variety of other things like veggie recipes and dishes.  Butternut squash, also called butternut pumpkin in some countries, is a type of winter squash. The given tasty soup made out of butternut squash is a guaranteed winner.

Preparation Time: 15-20 minutes
Baking Time: 45 Minutes
Cooking Time: 20-25 minutes
Yield: enough for 4-5 people

Ingredients:
• 1 large butternut squash
• 1/2 teaspoon (2ml) asafoetida
• 2 teaspoon (10 ml) grated fresh ginger
• 2 stock vegetable cubes
• 4 cups (1 litre) boiling water
• 1 teaspoon (5 ml) Salt
• ½ teaspoon (2 ml) freshly ground black pepper
• 142 ml single cream

Directions:
1. Preheat the oven to 220 degrees Celsius (oven with fan should be at 200 degrees Celsius).
2. Peel the butternut squash, remove the seeds from the pulp and cut the squash into 2cm cubes.
3. Place squash cubes into a roasting tin and roast in the preheated oven for around 45 minutes.
4. You don’t have to worry about the pieces blackening a little, as they would contribute in adding to the flavour.
5. After around 45 minutes, remove the pan from the oven and transfer the roasted squash pieces into a large pan.
6. Make up the vegetable stock and pour it over the squash.
7. Bring the squash and vegetable stock to a boil over a medium heat.
8. When it starts to boil then simmer it for around 10 minutes; but, don’t cover the pot.
9. Add the salt and pepper mix them well and again simmer for 5 more minutes.
10. Remove from the heat and make a puree of the cooked squash in batches.
11. You can freeze the soup at this stage.
12. Before serving add the single cream and heat gently, but don’t boil.
13. If desired, you can also add plain croutons or serve the soup with mini poppadoms.

After making this you can use them in the most healthiest of them all which is the chicken salad recipe or even the most delicious of them all which is the cheesy chicken and rice casserole.
